The origin of butter chicken
The story of how the butter chicken was invented is as interesting as the dish itself. Butter chicken originated in Delhi, the capital of India, sometime during the 1950s. Meanwhile, a man named Kundan Lal Gujral runs a restaurant in the city called Moti Mahal. Kundan had settled in another part of India after escaping political turmoil and started his own business. Moti Mahal was a success, serving many delicious tandoori dishes especially butter chicken (the tandoor is a circular clay oven), and it can be found in any Indian restaurant with its salty price.
Kundan’s restaurants quickly became a popular attraction in Delhi, and it wasn’t long before the butter chicken spread all over the world, to be enjoyed by people from all walks of life.

Ingredients
- For the chicken:
300 grams of boneless chicken without bones
1 tablespoon ginger garlic paste
1 tablespoon red pepper powder
Salt to taste
Oil in the pan
- For the gravy:
500 grams approximately tomato pieces
Cut about 100 grams of onion
1 tablespoon garlic paste
50 grams of cashews
1 tablespoon Kasuri methi
1/2 teaspoon hot spices
4 tablespoons sugar
2 tablespoons kashmiri chili powder
5 tablespoons butter
3 tablespoons cream
2 tablespoons malt vinegar / 1.5 tablespoons white vinegar
Salt to taste
Directions
- Marinate the chicken with the ginger paste, garlic paste, red chili powder, and salt and set aside for 15 to 20 minutes.
- In a pan over medium heat, fry the marinated chicken pieces in some oil, once the chicken is done place in a bowl.
- In the same pan, add the onion, oil, a tablespoon of butter and once the onions are cooked, add the tomatoes and cashews.
- Add a little water and garlic paste, salt, malt vinegar, sugar, hot spice powder, and chili powder. Evenly mix it and let it simmer for 15-20 minutes.
- Finely chop the mixture.
- Drag it back into the same pan to make sure there is minimal waste.
Add butter, cream, chicken, and Kasuri methi and let it simmer for 5-7 minutes. - Garnish it with cream and Kasuri methi
